Egg Noodles - How to cook egg fried noodles - chinese egg noodles recipe by latha channel

Ingredients:
·       
Noodles – 200 grams
·       
Grated Carrot – ½ cup
·       
Grated Cabbage – ½ cup
·       
Chopped onion – 1 Medium size
·       
Chopped Green chillies – 10 slit
·       
Salt to taste ( 1 – teaspoon)
·       
Soy Sauce - 1 teaspoon
·       
Non - Fruit Vinegar - 1 teaspoon
·       
Chopped Coriander leves – 1 teaspoon
·       
Red chilli powder - 1 teaspoon
·       
Eggs – 3
·       
Black Pepper Powder – ¼ teaspoon
·       
Coriander Powder – 1 teaspoon
·       
Oil – ¼ Cup
·       
Lemon – ½ Piece

Method:

01.  Place a bowl on the flame and pour 1/2 liter of water and boil the water .

02.  When rolling boil the water then add salt to taste and add 2 teaspoons of oil, Noodles
and saute for 4 to 5 minutes.


03.  Now remove the noodles from the heat and drain, pour the boiled Noodles into a
colander to drain the water away.


04.  Place a another pan on the flame and add oil and heat it.

05.  Break the eggs and pour into a bowl,  beat them and pour into hot oil, lightly scramble them and saute for 1 to 2 minutes, keep stirring.  Add 1/4 teaspoon of red chilli powder, salt, pinch of coriander poweder and stir well.  Saute for one more minute and take out into a plate and keep aside.

06.  Add oil in the same pan and heat.  Add Chopped green chillies, onions and saute well.  Add Grated Carrot, Cabbage and saute for 1 to 2 minutes.  Add 1 teaspoon of Red chilli powder, salt to taste and stir well.  Now add coriander powder, black pepper powder and stir well.

07.  Add boiled Noodles,  mix well and fry for 4 to 5 minutes and keep stirring between.

08.  Add Soy Sauce, Non - Fruit Vinegar and mix well and saute for 1 to 2 minutes. 

09.  Add fried egg and mix well.

110.  At last Add Chopped Coriander leaves and mix well.

111.  Now switch off the flame.

112.  Take out into the serving plate and garnish with onions, lemon and coriander leaves.
